Matcha isn’t just a cozy morning ritual—it’s a gut-loving, blood sugar-balancing powerhouse. Thanks to its rich supply of antioxidants like EGCG, matcha helps reduce inflammation and oxidative stress, while also feeding beneficial gut bacteria like Akkermansia muciniphila, which supports a healthy gut lining and glucose regulation. Sipping on a matcha latte with collagen, vanilla, and honey is a simple and delicious way to nourish your microbiome, support metabolic health, and give your body a clean, sustained energy boost—without the jitters.
Yields: 1 serving
Ingredients
1 tsp high-quality matcha powder (I recommend MatchaNude)
2–3 oz hot water (not boiling — ~175°F / 80°C)
1 cup milk of choice (almond, oat, coconut, grass-fed whole milk, etc.)
1 tsp honey (adjust to taste)
1/4 tsp pure vanilla extract
1 scoop collagen peptides (unflavored)
Optional: a few drops of peppermint extract, a scoop of strawberry powder, or a pinch sea salt for extra flavor.
Instructions
Add hot water to a mug and whisk vigorously with a bamboo whisk or handheld frother until smooth and frothy.
If making a hot version: In a small pot or milk frother, heat the milk until warm (don’t boil), then stir in the vanilla extract, honey, and collagen until fully dissolved. If making an iced latte: Blend the ingredients into the hot matcha water instead, then add your cold milk of choice!
Pour the milk mixture over the whisked matcha.
Stir gently or froth everything together for a creamy finish.
Add in your optional extras (I personally love peppermint essential oil drops in my hot lattes, and strawberry powder in my iced!).
Taste and adjust sweetness if needed (I sometimes add a pinch of monkfruit extract).
