This slow cooker chipotle chicken stew is packed with protein, fiber, and bold smoky flavors! Ingredients

  • 2 lbs chicken breast, cut into 2-inch cubes

  • 3 teaspoons ground cumin

  • Sea salt

  • Black pepper

  • 1 onion, chopped

  • 1 15-ounce can diced fire-roasted tomatoes with green chiles

  • 1 chipotle chile in adobo sauce, chopped

  • 1 teaspoon dried oregano

  • 1/2 cup fresh cilantro, torn

  • 2 small bags of frozen sliced bell peppers

  • 3 avocados

  • 1 can black beans

  • Optional: Crumbled cotija cheese (if dairy is tolerated)

  • Optional: Crushed tortilla chips (preferably Siete brand)


Instructions

  1. Place the chicken in a 6- to 8-quart slow cooker.

  2. Add the onion, tomatoes, black beans, chipotle, oregano, cumin, salt, and pepper.

  3. Cover and cook on low for 7-8 hours, until the chicken becomes tender and the sauce thickens slightly.

  4. Finish with a topping of crushed tortilla chips, 1/4 of an avocado (diced or sliced), fresh cilantro, and crumbled cotija (if dairy is tolerated).
