Overnight Creamy Chia Protein Mousse



If you’re looking for a quick, nutrient-dense breakfast or snack that you can prep the night before, this tasty chia mousse is it. Packed with protein, healthy fats, and fiber, it keeps you full and energized while supporting balanced blood sugar. Plus, the flavor is totally customizable with cacao, fruit, or your favorite toppings.

Prep Time: 5 minutes


Ingredients

  • 1 can full-fat coconut milk

  • 2 scoops protein powder (I recommend Nuzest plant-based protein powder)

  • Optional: 2 tbs organic cacao powder

  • Stevia extract or pure maple syrup to taste

  • 5 tbs chia seeds


Directions

  • In a blender, combine the coconut milk, protein powder, cacao powder (if using), and chosen sweetener. Blend until smooth and well combined.

  • Transfer mixture to a bowl or pitcher, then stir in the chia seeds until evenly distributed.

  • Pour into glass jars or containers. Cover and refrigerate overnight (or at least several hours) to allow the chia seeds to absorb liquid and thicken.

  • When ready to eat, top with berries, nuts, or a low-sugar granola for added flavor & texture.
