Starting your morning with a solid dose of protein is one of the most powerful habits you can build for steady energy and optimal health. Beginning your day with protein helps prevent morning blood sugar spikes, curbs mid-day cravings, and keeps your focus sharp all morning long.
That’s where these overnight oats come in: it’s insanely easy to whip together, plus it’s packed with fiber to support healthy digestion and loaded with healthy fats to keep you feeling truly full and nourished until lunch.
Yields: 4 servings
Prep Time: 5 minutes
Ingredients
2 cups gluten-free old-fashioned rolled oats
4 scoops vanilla protein powder (I recommend Nuzest plant-based protein)
1 cup berry-flavored Greek yogurt or dairy-free alternative (like Siggi’s Plant-Based Coconut Blend or Icelandic Provisions Oatmilk Skyr)
1 tbs chia seeds
2 cups dairy-free milk alternative (I like Califia Organic Almondmilk)
Optional: 1 tbs raw honey for sweetness
Optional toppings: fresh fruit, low-sugar jam, or grain-free granola
Directions
In a large bowl, mix together the dry ingredients: gluten-free rolled oats, vanilla protein powder, and chia seeds.
Incorporate the wet ingredients by adding the yogurt, dairy-free milk alternative, and raw honey (if using). Stir thoroughly until completely combined.
Divide and transfer the mixture into 4 glass containers or jars.
Cover and refrigerate overnight (or for at least a few hours) to allow the oats and chia seeds to absorb the liquid and thicken.
Store in the fridge for up to 5 days. When ready to eat, top with fresh fruit, low-sugar jam, or grain-free granola for added flavor & texture!
