Gut-Friendly Apple Pie Protein Overnight Oats (Gluten Free, Dairy Free)

If you love the cozy flavors of apple pie but want a more nourishing way to enjoy them, these Apple Pie Protein Overnight Oats are for you. They’re creamy, packed with protein and fiber, and full of warm cinnamon, nutmeg, and allspice.

The best part? A simple topping of warm, stewed cinnamon apples (which are incredible for feeding healthy gut bacteria!) makes these overnight oats taste like dessert for breakfast, without needing a ton of added sugar.

I have to say, these are my favorite overnight oats I've made to date! I'm sitting here enjoying this on a crisp October day as I type this post out - and nothing feels more like Fall!

Yields: 4 servings

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes + overnight chilling

Ingredients

For the Overnight Oats

  • 2 cups gluten-free old-fashioned rolled oats

  • 4 scoops vanilla protein powder (I recommend Nuzest plant-based protein)

  • 1 cup Siggi’s Vanilla Cinnamon yogurt or dairy-free alternative

  • 2 cups unsweetened dairy-free milk of choice (I like Califia Organic Almondmilk)

  • 1 tsp vanilla extract

  • 2 tsp Ceylon cinnamon or regular cinnamon

  • ½ tsp nutmeg

  • ¼ tsp allspice

  • Optional: 1 tbsp raw honey or pure maple syrup for additional sweetness

For the Stewed Cinnamon Apples

  • 2 organic red apples, diced into small pieces

  • 1 tsp Ceylon cinnamon or regular cinnamon

  • 2 to 3 tbsp water

Optional Toppings

  • Low-sugar gluten-free cinnamon granola (I like Paleonola)

  • Extra sprinkle of cinnamon

  • Chopped walnuts or pecans

  • Drizzle of pure maple syrup

Directions

1. Make the Stewed Cinnamon Apples

Wash and dice the apples into small, bite-sized pieces. You can leave the skin on for extra fiber, or peel them if you prefer a softer texture.

Add the diced apples, cinnamon, and water to a small saucepan over medium-low heat. Stir, cover, and let simmer for about 8 to 10 minutes, stirring occasionally, until the apples are tender but still have a little texture.

Remove from heat and set aside to cool slightly.

2. Make the Overnight Oats

In a large bowl, combine the gluten-free rolled oats, vanilla protein powder, cinnamon, nutmeg, and allspice.

Add the Siggi’s Vanilla Cinnamon yogurt, milk, and vanilla extract. Stir thoroughly until everything is well combined.

Add the optional honey or maple syrup if you prefer a sweeter oatmeal.

3. Refrigerate

Divide the mixture evenly between 4 glass containers or jars.

Cover and refrigerate overnight, or for at least 4 to 6 hours, allowing the oats to soften and absorb the liquid.

4. Add Your Toppings

When you’re ready to eat, top each serving with a generous spoonful of the stewed cinnamon apples.

For a little extra crunch, I love adding a sprinkle of low-sugar gluten-free cinnamon granola, like Paleonola. You can also add chopped walnuts or pecans and an extra sprinkle of cinnamon.

Enjoy cold, or warm the oats and apples together for an even cozier apple pie-inspired breakfast!

Storage: Store the overnight oats in an airtight container in the refrigerator for up to 5 days. Store the stewed apples separately and add them when serving.
